Preparing food everyday like Singapore Airlines does for a whole airline is something that most of us probably never think about. We have all had our share of great and horrible airline food but some airlines definitely do it better than others. Even as a small operation with our hotel, it takes a lot of work just to keep our kitchen in top shape to prepare all the food for our guests. We have an extensive shopping list that we refill every 2 to 3 days or less. We make everything possible from scratch so we are always testing new food ideas on ourselves. And when we cater for large groups of 50 and up, we have to be very organized. So I can’t imagine having 30 cooks preparing 1500 meals for a single flight.
